Before I start, can we just talk about Divergent for a sec? You know, that movie that just came out that all the teens are going WILD for and has been on the best seller list forever? Well, I’m a book-ie (in the same way some people are foodies) and I love reading. And when people are shouting praises (moms and teens and children) for awhile, I end up feeling the necessity to pick up the book and see what all the hub-bub is about.
Well, the book is awesome. Since Sunday, I have read through the first two books and am now on the 3rd. Addicted.
I know there are tons and tons of ways to make both complex and simple pancakes, but this one takes the (pan)cake (haha). Usually Ryan could care less about my “health-centric” meals, but when I made these, he kept commenting on how good they smelled. And guess what? They taste as good as they smell!
I legit made these while rushing to catch the bus for work. That’s how easy they are (yet feel so decadent/weekend-ish). In this case, I topped them with almond butter and strawberries (perfection), though I want to try applesauce next time.
- One scoop of vega vanilla protein powder (you can use almost any protein powder)
- 1 egg
- 2 (addition) egg whites
- ½ banana
- Combine protein powder and eggs in bowl.
- Mash banana so that it mixes with other ingredients.
- Mix again.
- Place in greased pan (you can use PAM or coconut oil, I used an olive oil spray).
- Make and flip pancakes as normal and top with your favorite ingredients!
While I considered this one serving, I only ate about 2/3 of the pancakes (because I was shoveling them into my mouth while halfway out the door). If you want to lower calories (or other nutritional count) feel free to divide them up with another person. Either way you win: the protein makes this recipe UBER filling.
